Off-Menu Lunch Options

For most of us, it’s easy to fall into a routine of getting the first thing you see on the lunch menu, without considering the healthier options available. Of course, you can always go to the salad bar, but even that can get mundane day in and day out. Lunch is the best part of the day! Why not keep it fresh with these healthy, yet delicious, meal alternatives made with ingredients already found in our cafeteria?

 Surprising Salads 

  • On Fridays, try combining Chick-Fil-A nuggets with a green salad. The nuggets may be known best to be dipped in sauce, but they taste even better tossed in a salad with honey mustard dressing.  
  • When it’s taco day, make a bowl of lettuce and use the taco beef as a source of protein. Add on some guacamole, salsa, sour cream, or cheese to make your own delicious taco salad. 

 Unexpected Sandwiches 

  • On any day of the week, use the salad bar deli meats, turkey & ham, & substitute the usual American cheese with pimento, all on whole wheat bread. 
  • For a more protein-based sandwich, combine bananas & peanut butter. 
  • If you want to use a different type of bread, try the croissant bread, which tastes great with a chicken salad spread.  

 Break-time Snacks 

  • If you’re looking for a fruit-based snack, the apples & bananas make a great pair with the peanut butter.  
  • For more of an energy boost, the peanut butter can be enjoyed on a Nature Valley granola bar. 
  • A veggie-based snack would include dipping carrots or celery in hummus. 
  • Hummus and pretzels are another delicious combination.
